This salad is fifth in my #husbandkadabba series…
Ingredients
For the salad:
- 5 to 6 strawberries sliced
- 4 tablespoon crumbled cottage cheese seasoned with black pepper
- 1/4 cup chinese red cabbage
- 1/4th of an apple thinly sliced
- 1/2 cup baby spinach
- A handful of toasted nuts (walnuts and pistachio)
For the dressing: Strawberry Lime Vinaigrette
To make the dressing for this salad, whisk together all the dressing ingredients as follows and adjust salt and pepper to your taste:
- 2 tbsp of extra virgin olive oil
- 2 fresh strawberries
- 1 tbsp fresh lime juice
- A dash of mustard
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
Method:
To transfer all the prepped ingredients into the jar, first pour in the strawberry lime vinaigrette dressing and let it settle at the bottom of the jar. Now layer with sliced strawberries, crumbled cottage cheese, chinese cabbage, sliced apple and then the baby spinach.
Finish off the jar with toasted nuts of your choice, I have used walnuts and pistachio…
