Supercharging chickpea salad

This supercharging chick pea salad is the perfect mid week salad that is full of proteins… Get this protein-packed salad to work or school in a well-sealed container. Give it a shake just before opening to redistribute the creamy dressing.

A quick, great tasting salad. A nice break from the traditional leafy green salads!
This salad is fourth in my #husbandkadabba series…

 

Ingredients

For the salad:

  • 1/2 cup chickpeas boiled and drained
  • 1/4 cup cucumber
  • 1 boiled egg
  • A handful of halved cherry tomatoes
  • 4 black olives cut in slices
  • 1/4 cup chopped capsicum
  • 1 onion diced
  • 1/4 cup cut pineapple

For the dressing:

To make the dressing for this salad, whisk together all the dressing ingredients as follows and adjust salt and pepper to your taste:

  • 2 tbsp of extra virgin olive oil
  • 1 tbsp plain yoghurt
  • 1/2 tbsp freshly squeezed lime juice
  • 1/2 tbsp red wine vinegar
  • 1 small garlic clove minced
  • 1/2 tsp cumin powder
  • 2 tsp of chopped parsley
  • 1 tsp of chopped coriander
  • Salt and pepper to taste

Method:

To transfer all the prepped ingredients into the jar, first pour in the dressing and let it settle at the bottom of the jar. Now layer with cucumber, chickpeas, followed by a slice of boiled egg, onions,cherry tomatoes, olives, capsicum and pineapple.
