Healthy Bean Sprouts Salad

25 January 2016

Healthy Bean Sprouts SaladThis one is a quick salad from my repertoire of salad recipes. All you need handy is bean sprouts. The sesame oil and soy sauce in the dressing along with green chilies, honey and garlic impart a nice tangy and sweet flavor to the salad. And the toasted peanuts add the right amount of crunch…

This is my tenth salad in the#husbandkadabba series

Ingredients

For the salad:

  • 1/4 cup cucumber cut in chunks
  • 1/2 medium sized yellow bell-pepper, squared
  • 1/4 cup bean sprouts (lightly sauteed)
  • 1 large tomato diced
  • A handful of  pomegranate
  • A handful of toasted peanuts

For the dressing:

To make the dressing for this salad, whisk together all the dressing ingredients and adjust salt to your taste:

  • 2 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp vinegar/ lime juice
  • 1/2 clove of garlic grated
  • 1 green chili finely chopped
  • 1 tsp honey
  • Salt to taste

Method:

To transfer all the prepped ingredients into the jar, first pour in the dressing and let it settle at the bottom of the jar. Now layer with cucumber, yellow bell pepper, sprouts, tomato and pomegranate. Finish off the jar with toasted peanuts
