A wonderful salad creation and it is one of my super simple recipes. Combine the flours of the creamy mayonnaise dressing with winter veggies and sausage and viola you get a kick ass salad. Tip the jar contents into a plate or a bowl or just eat it straight out of the jar…this refreshing salad is sure to make you come back for second helpings..

Ingredients:

For the salad

  • 1/4 cup diced carrots, sautéed lightly in olive oil with cracked black pepper
  • A handful of fresh green peas sautéed lightly in olive oil with cracked black pepper
  • 2 breakfast sausages pan fried with just a brush of olive oil and cut into circular pieces
  • 1/4 cup diced apples
  • 1/2 cup baby spinach leaves
  • 4-5 halved cherry tomatoes

For the dressing: 

Whisk together all the ingredients in a small bowl. Adjust the salt to your taste and set aside until ready to use

  • 1 1/2 tbsp store bought mayonnaise
  • 2 tbsp extra virgin olive oil
  • A dash of mustard
  • 1 tsp chilli flakes
  • 1/4 tsp lime zest
  • A dash of freshly ground pepper
  • Salt to taste

Method:

Prep all the ingredients and set them aside to cool down. Now to start assembling the salad jar first pour in the dressing and let it settle at the bottom of the jar. Now layer the jar with sauteed carrots, peas, sausage, apples,  followed by spinach and finally the cherry tomatoes.
